Green Phone Booth: Sweet Potato Bisque




Temperatures are getting cooler and I'm seeing more and more squash at the farmers market and in my CSA bag. This easy soup (from a friend of my sister) is one of my favorite ways to use up sweet potatoes. This was a favorite baby food of my second child.

What's for Breakfast? Whole Wheat Pancakes




One of my goals after my month of Plastic Awareness was to eat less packaged cereal. And lately, cold cereal with milk just hasn’t been filling us up enough anyway. Anyone with kids also knows that breakfast for dinner is always a good idea, and a pretty painless way to have a Meatless Monday too! So I’m writing a series of posts featuring my favorite breakfast recipes.

I like to make pancakes at least once a week.  Here is my favorite whole wheat pancake recipe with some variations. (Note: this post is an update and expansion of this post from last June.)

This recipe dates all the way back to my very first recipe book.  It’s an oldy, but a goody.  You may know it as a Puffed Oven Pancake.

Two Favorite Thanksgiving Side Dishes

Are you thinking about Thanksgiving yet? Here are two of my favorite side dishes anytime, but especially for Thanksgiving. Both can easily be adapted for special diets: dairy-free, sugar-free, grain-free, vegan, etc.  Sadly, I can't remember the exact origin of either recipe (both have been adapted from whatever the original source was), nor do I have my own photos of either of these dishes.  Oh well.  Enjoy!

Healthy Homemade Snack: Whole Grain "Cookies" (Updated Recipe)



Three months ago I posted the recipe for our favorite on-the-go snack:  whole grain "cookies."  Since then, I have tweaked the recipe a bit, and this is now my preferred version.  I switched to all honey, after writing this post about sweeteners.  I also added another egg for more protein (why not?), and a little more milk, so they would be more cakey and less crumbly.  This makes them a bit less messy for my toddler to eat.  I also use double the raisins now after a failed experiment with chocolate chips (my toddler picked them out, which was extremely messy).

Decadent Whole Grain Pancake Breakfast

We love love love pancakes at our house.  I could do an entire whole grain pancake series.  It is now strawberry season (hooray!), so we've been having this decadent version of pancake breakfast one or more times per week.

This is a double recipe.  Why even bother making the single recipe?

Homemade 100% Whole Wheat Honey Bread (without a bread machine)



A few months ago, once the weather turned colder, I decided to try making my whole wheat bread with a standing mixer and oven instead of a bread machine.  Now that I had proven to myself that I was actually going to make all of our own bread, I was willing to invest in some equipment.  Making my bread using a mixer and oven has several advantages over making bread in a bread machine: 
  • My bread machine was one of the final holdouts of Teflon in my kitchen, and its nonstick coating was already showing signs of wear.  Now I make plastic-free bread by mixing the dough in a stainless steel bowl and baking the bread in my glass Pyrex loaf pans.*
  • By using a mixer and oven, I have greater flexibility in the cooking process.  For example, if the weather is cold and the bread is rising more slowly, I allow the bread a longer rise.
  •  I can make several loaves of bread at once (and freeze most of the loaves), instead of a loaf of bread every few days.
  • A loaf of bread made in a loaf pan in the oven is just more aesthetically pleasing than the loaves that come out of the bread pan of a bread machine.  And now that I have mastered the mixer/oven method, it will be easy to use the dough for other things, like rolls.

I love cookbooks.  I love reading through the ingredient lists and looking at the pictures.  Sadly, most cookbooks turn out to be duds, in my opinion.  I always check out cookbooks from the library before buying them now.  I learned my lesson after buying several cookbooks by a Food Network Star at Costco.  Several years later I was finally able to accept defeat and donate them to Goodwill (I couldn't sell them).

Lentil Cheese Loaf/ Vegetarian Meatloaf (Meatless Monday)

I am married to a South American.  And do you know what South Americans like?  Meat.  So I consider it a major accomplishment whenever I sell my husband on one more meatless dish.  The first time I made this Lentil and Cheese Casserole, my husband told me it was better than meatloaf.  And my mom makes a good meatloaf (whenever we visit, because she knows my husband likes it).  It isn't the prettiest dish (you know what color lentils are, right?), but it is delicious and meatless!

This loaf has extra onions (not so finely chopped) and probably some extra cheese too.  I like that this recipe is pretty fudge-able.

How I Meal Plan


It's taken me a while to figure out a meal plan system that works well for me.  For many years, I've kept a list of all my greatest hit recipes to refer to when planning the next week's meals, but I always agonized over what to choose that week (Didn't I just make tostadas? Is that too much chicken in one week?) and often ended up forgetting an ingredient (because sometimes I'd forget to check the ingredient list for each recipe before going to the store) or tossing out a perishable ingredient that didn't get used up.
