I think the yeast is usually the number one suspect. You can kill the yeast if you add ingredients that are too hot... Also temperature will affect the amount of time it takes to rise. Other than those ideas, I'm not sure! In my own experience with making and serving delicious bread, cutting it really requires a sharp knife. That being said I recommend that you use the <a href="https://www.dmtsharp.com/applications/culinary/" rel="nofollow">DMT kitchen bench stone</a> if you're in need of keeping your bread knives sharp.
